Culinary Delights

From the freshest seafood to delectable Acadian dishes, here's a list of some of our finest treats - the authentic New Brunswick products we've perfected. 
 

Maple and Mustard Salmon
Makes: 4 portions  

Ingredients:
½ cup melted butter (125ml) 
½ tablespoon dry dill (7.5 ml) 
½ cup maple syrup (125 ml) 
¼ cup Dijon Mustard (50 ml)  
4 salmon portions

Method:

•    Mix the ingredients on low heat until the mix becomes uniform
•    Prepare the grill or the BBQ for the salmon
•    Cook one side of the salmon first on the BBQ before beginning to spread on the ingredients
•    After turning the salmon, spread the ingredients on the other side
•    Keep spreading the ingredients evenly and turn the salmon until cooked

These tasty ferns look like the head of a fiddle - hence the name fiddlehead.  Also known as the Ostrich fern, they grow along the banks of rivers and streams in New Brunswick.  They are picked between April and May, and can be found at farmers markets, roadside stands and grocery outlets, as well as many fine restaurants throughout the province. read more ...
